I found this recipe a while ago in a Lion House Cookbook I check out from the library. I think it was from the Lion House Entertaining cookbook. The library is a great place for me, lots of cookbooks that I can have for 3 weeks for free. My husband and out pocket book are definitely grateful for the library. This also helps me decide if a cookbook is worth purchasing.
I like this recipe because it was similar to a recipe I have posted before, Shockingly Simple Fruit Dip. That recipe uses a block of cream cheese and a jar of marshmallow creme to create a fast and delicious fruit dip. So this recipe is basically the same idea except you use flavored cream cheese and a couple tablespoons of juice. The recipe calls for pineapple cream cheese or strawberry cream cheese. I used strawberry. The orange and lemon juice were a nice addition also. Just gave all that sweetness a little tang. We all loved it. I especially loved it with bananas and it was pretty good with the apples too. I am sure it would also be excellent with the pineapple cream cheese. I’ll have to try that next time. This dip will be a breeze to whip up anytime.
1 (8 oz.) tub of strawberry or pineapple soft-style cream cheese
1 (7 oz.) jar of marshmallow creme
1 tablespoon orange juice
1 tablespoon lemon juice
In a mixing bowl, beat together ingredients until smooth. Refrigerate before serving. Serve with fresh fruit. Makes 2 cups.
